Orzo with Roasted Vegetables

An easy recipe from Ina’s book “Barefoot Parties“. When I am looking for a fuss-free, quick and satisfying weeknight meal this recipe comes to mind. It is “all-in-one side dish” because it includes pasta, roasted vegetables, feta, and pine nuts, and it's topped with a lemony olive-oil vinaigrette.

I highly recommend Ina’s favorite olive oil - “Olio Santo Extra-Virgin Olive Oil” in this dish. Very mellow flavor, perfect for this dish. I have made it in past and used Costco’s Kirkland brand organic olive oil which I felt was too strong here.

Also, feta cut in cubes rather than crumbled gave a nice texture. Loved the freshness of green onions and basil.

Comes together easily and presents beautifully. Looks pretty on a large platter or bowl.

It would be perfect served warm or room temperature. Wonderful served along as a side dish for rack of lamb or crispy chicken or as a vegetarian main dish along a side of leafy green salad. Great for make ahead, picnic and potluck. Recipe makes a huge batch...!
